A Little Rant & A Recipe

Day 2 of the yeast free diet and I’m only slightly depressed. Go me. I even made it through a whole episode of the Bachelor last night without any wine.. mostly because crazy pants Victoria had enough for me. I’m not going to be all Judgy McJudgerson here because I’ve shed my fair share of tears while heavily intoxicated, but I’ve never done it on national TV.. which is why I’m currently having a better day than Victoria, even if I can’t have a Diet Coke. I’ve never met Juan Pablo though.. so maybe she’s having a better day? That bitch is probably drinking a Diet Coke at this very moment.

So I’m going to attempt to be domesticated tonight and make an actual meal.. a yeast free meal to be exact. Thought I’d share the recipe since it looks and sounds so yummy and its good for you. I do have to warn you that this is waaay more involved than my usual Kraft mac&cheese.

Spaghetti Squash Casserole

 


Ingredients:

•1 large spaghetti squash

•1 pound ground turkey

•3 roma tomatoes, diced

•1/2 yellow onion, chopped

•1 C pizza sauce (1 C tomato sauce + 1/2 t dried basil + 1/2 t dried oregano + 1/4 t garlic powder. Mix well.)

•1 t dried basil

•3 garlic cloves, minced

•3 eggs, whisked

•salt and pepper, to taste

 
Instructions:

1. Preheat oven to 400 degrees.

2. Cut spaghetti squash in half lengthwise, face cut sides down on baking sheet and bake for 25 minutes.

3. While squash is cooking, brown your ground turkey and set to the side.

4. Once squash is done cooking, using a fork, scrape out the insides of the squash making your "noodles" and place in an 8x8 greased baking dish.

5. Reduce oven to 350 degrees.

6. In baking dish, add turkey, pizza sauce, tomatoes, onions, garlic, basil, salt and pepper.

7. Add whisked eggs and mix everything together.

8. Bake in the oven for 1 hour, until you begin to see a "crust" forming on the top.

9. Serve hot and enjoy!

*If you are not following a yeast-free eating program, feel free to add a little Parmesan cheese to the top.. ya lucky little biotch.

YUM! I have yet to master the spaghetti squash, lol! I seem to always over cook and it ends up a little too mushy. I shall try again! ;)
